Tropical Strawberry Muffins (with recipe)

I put this recipe together yesterday when I had leftover pineapple juice in the fridge and a fresh carton of strawberries. These are light and fruity and a bit on the sweet side, so I don’t know if that makes them more cupcake-y than muffin-y, but they don’t need icing so I’m calling them muffins.

Cupcakes/Muffins #12, 13, 14, 15

So I’ve decided to cheat with my 52 Cupcakes goal by letting muffins qualify. They’re pretty much the same thing except less sugary. I’ve been trying to eat breakfast everyday but the only way that happens is if I can grab something on the way out the door and eat it while waiting for the […]

Homemade Vanilla Extract: UPDATE (part 2 of 2)

Some of you may remember my first post about homemade vanilla extract from June in which I split 2 vanilla beans down the middle, added them to 3/4 cup of vodka, and set the mixture aside. Homemade Vanilla Extract: Part 1

A few months back, a friend of mine became very excited about vanilla beans and sent me a link with instructions for making vanilla extract. I decided immediately that I would have to make it. Cupcake #5: Berry Vanilla

Spring is here with its warm breezes, blue skies and shoots of green poking through the earth. The emergence of sunlight and shedding of winter coats has a certain abandon to it, like breathing fresh air for the first time in months. It puts me in the mood for a cupcake that is cheerful and […]

Homemade Sesame Bagels

Right, so two weeks ago I was offered my first job in my field of study, which I accepted of course. So exciting! Now that I work at a medical laboratory, I need to wear scrubs and finding comfortable scrub pants is no easy task. I go to a different area of the city to do my shopping, and […]

Oreo cupcakes

Today I will share my secret weapon: the Oreo cupcake! It is sure to impress, yet deceptively simple to make. Several people have specifically requested that I bake this as a cake for their birthday. If I don’t know what to bring to a potluck, oreo cupcakes come to the rescue! While I provide a cake and icing recipe here, […]
